Carrot Cake Energy Balls

This is a perfect snack if you feel you like a bit of sweetness. Perfect around Christmas, too!

These little balls contain lots of Vitamin A, Magnesium and Iron. But, most important, they are super yummy and ready to eat in no time – no baking required!

INGREDIENTS

  • 4 Medjool dates
  • 150g grated carrots
  • 50 gr oats
  • 1 tbsp maple syrup or rice malt syrup
  • 1 teaspoon vanilla
  • 30 g oat flour (just add oats to the food processor and pulse them) or any other wholegrain flour
  • 1 tbsp chia seeds
  • cinnamon
  1. First pulse the dates in a food processor until they form a coarse paste. Then add all other ingredients and pulse until a few times until combined. If the mixture is too runny add some more oats. Place in fridge for 30 minutes to firm slightly and then roll into one inch balls.
  2. Roll the balls in fine oats and keep in an air tight container in the fridge for up to one week.
