If you are looking for an al fresco meal which is delicious and healthy – look no further. We have created a lovely salad for you, full of goodness like protein, omega 3, Vitamins B3, B6, B12 as well as iron and zinc:
Salad with roasted vegetables and prawns
Ingredients for two portions:
Half a small head of lettuce
200 gr of cherry tomatoes
1 red pepper
1 or 2 garlic gloves
1 small onion
350gr of fresh or frozen high quality prawns
For the dressing:
1 tbsp of hummus
1 tbsp of lemon juice
2 tbsp of olive oil
Dried herbs to taste
Pepper to taste
1 tsp of mustard
Add all the ingredients for the dressing and set aside. Cut the lettuce in bite size pieces, cut the tomatoes in half and place them in a bowl.
Cut the peppers and Courgettes in slices, heat some olive oil in a frying pan and roast the vegetables on both sides, after a few minutes add some minced garlic and onion and reduce temperature slightly.
When roasted, remove the vegetables from the pan, place them on your salad and add the prawns to the frying pan and roast it for few minutes so they are only slightly warmed up. (don’t overdo it, they quickly become dry)
Mix all the ingredients for the dressing. If you like it a bit milder and creamier, you can add a tablespoon of yoghurt. Add the salad dressing, go outside and enjoy!
